Chai is the universal word for "tea" in many countries, including India, China, Japan and some parts of Russia.  The word "Chai" in the U.S., however, has come to mean "Masala" or "Spiced" Tea, served already combined with milk and sugar.  Coffee Shops and Tea Rooms have transformed this lowly Indian beverage available ubiquitously in India at every tea shop and railway station into a trendy, hip, frothy, iced, cool frappe or latte.

Tips for Chai Tea
Bring fresh cold water to boil.
Use two teaspoons of leaf per 7 oz. cup.
 Steep 5 minutes.
Add hot milk (approx. 1/3 cup milk to 2/3 cup chai) and sugar to taste.  (Do not add milk to Kashmiri Green Chai)
 Enjoy!
